Baking cake involves forming microstructures

02
Mar
2017

Cake making incorporates mixing flour, sugar, margarine, egg and baking powder into a thick batter which is finally transformed by heating into a solid foam with characteristic microstructural elements. This session will discuss the characterization of cake microstructural features with an emphasis on the influence of the ingredients and mixing time. The application of an innovative experimental design will be outlined. The microstructural characterization is then used to explain the function of the product by interpreting its textural properties.
